BBQ at Emily's

My friend Emily invited us over to her house for a BBQ today.  It really was a perfect day for it weatherwise, too - 26°C/80°F and sunny.  All week the weather has been fantastic and it will continue to be so at least the next few days.

This morning, after a snooze on Mommy's chest in bed, we came down stairs, and as I was putting away the dishes in the dishwasher, I decided Ellen's usual good mood in the morning ought to be caught on camera.  She tends to get grumpier as the day goes on.

Ellen has started gripping things this week like her clothes, blanket and my hair!

A cheeky grin... quite a typical Ellen face.

2:30AM

I spend most of the day - and most of the night - looking at Ellen. I am constantly amazed by her... even at 2:30 this morning, when these pictures were taken. When I feed her in bed she is usually mesmerized by the lamp next to the bed, which casts a soft glow on her face... so pretty. Ellen is 7 weeks old now and weighed 10lbs., 4oz. yesterday at her doctor's appointment.

I try to take a walk most days of the week down the country lane near our house for two reasons - to get in some light exercise and to get Ellen to sleep... a constant struggle.  Although it's May, it's still relatively cool.  The hat Ellen has on below was sent to her by her great grandma.

For a couple of weeks now, I've been meaning to take my camera with me to take a picture of the beautiful yellow fields of rapeseed in the fields around our village; I finally managed to do that today.  This is the country lane we walk down when we take walks.
There are fields of rapeseed all around these parts, but they are even more numerous in Gloucestershire, the county we lived in before moving here to Shropshire.

Picnic in the Park

Ellen enjoyed her first picnic in the park - The Quarry in town - today after church.  We weren't going to pass up a sunny and somewhat warm day, even though it was quite windy.  (Don't worry... Ellen was covered by my nursing cover the majority of the time so she wouldn't get too much sun.)

Rhubarb Curd Bars

It's rhubarb season! For some, this conjures up thoughts of overgrown weeds in the garden, for others, the mind wanders with the many uses of rhubarb - sweet or savory, in a pie or served atop pork?  How about rhubarb curd?  I hadn't heard of it either, but it sounded delicious.  Add it to a shortbread base, all I could think was "yum-o!"  It was about time I did something with the rhubarb Beverly gave us last Easter... and I'm not talking about Easter last month, but a year ago that has been living in the freezer drawer ever since.

Rhubarb Curd Bars

Rhubarb Curd (in the jar in the picture)
400 grams rhubarb (about 10 to 15 stalks)
1/3 cup sugar
6 egg yolks
3/4 cup sugar
a pinch of salt
1 teaspoon lemon zest (optional)
50 grams unsalted butter, cut up into chunks
Wash and chop rhubarb into 1/2 inch chunks. There is no need to peel, but if your stalks are particularly large, you might trim off any tough parts. Stir the rhubarb and 1/4 cup of sugar together and let sit for about 10 minutes. Place in a medium sized pot with about 1/4 cup of water and cook over low heat until you can no longer see whole pieces. Turn off the heat and let cool to room temperature. Blend to a smooth puree if you desire (this will remove any remaining little stringy bits, but it isn't necessary).
If you are making the bars, pause at this point to make and bake the crust.
In a double boiler (or a bowl over boiling water), whisk the egg yolks, remaining sugar and salt. Whisk until well combined and warm. Add about 1 cup of the stewed rhubarb and the lemon zest. Keep stirring until the mixture is warm again. Check for taste and add more of the pureed rhubarb until you get the desired flavor and color. Remove from heat and stir in the butter chunks.
If you are not using the curd immediately, let it cool to room temperature and then store refrigerated for up to a week.
This recipe makes more curd than you'll need for the Rhubarb Bars.

Rhubarb Bars
Makes about a dozen
4 ounces butter, room temperature
1 cup (136 grams) all-purpose flour
1/4 cup sugar
a pinch of salt
about 1/2 of the Rhubarb curd recipe from above
Powdered sugar for dusting (optional)
Preheat the oven to 350.
Place the butter, flour, sugar and salt in the bowl of a mixer. Start on low speed (to keep the flour from flying everywhere), stir until it resembles course crumbs. Then increase speed slightly and continue to mix until a soft dough forms. It's kind of magic.
Take the dough and press it into a 9" x 5" baking dish. Let rest at room temperature for about 15 minutes, and then bake until it is lightly golden, about 20 minutes. While the dough is baking, finish preparing the curd.
Pour the enough curd onto the crust to make a layer a little less than 1/4 inch thick, and bake for another 10 minutes, until the curd has set. Cool to room temperature. Refrigerate if desired (it's easier to slice when chilled, but not necessary). Dust with powdered sugar before slicing if you'd like.

Long Day

As you can tell, it's been a long day.  Nothing in particular made it a long day, but both Jeff and Ellen are asleep on the recliner as I type this.  Ellen couldn't be more comfortable!

Ellen and I got her photo taken for her passport today. Afterward we drove to the McDonalds near Jeff's work to meet him and a couple of his colleagues for lunch. Ellen enjoyed seeing her daddy midday.  I can't forget to mention that Ellen has significantly started cooing and not just when she's on her playmat, but also from the car seat... so cute... we love our indepth conversations!

Ellen also likes to cuddle with her mommy... this was taken a few nights ago.

Ellen Turns 1 Month

Our baby girl turned 1 month old on Saturday. Ellen has grown from a wrinkly newborn to an alert, chubby baby this past month.  She is just beginning to fit into her 0-3 month clothes, like the outfit she has on in the photo, and will soon fit into size 2 diapers.  Within the past few days she has begun to smile at us, too, which is such a thrill.  Ellen loves to play on her playmat, eat, sleep and cuddle with Mommy and Daddy.  Ellen also likes being in her car seat and car rides, as long as they're not too long, and all of the attention she receives from our church after service and any other visitors. Most babies like the comfort of being swaddled, but not our baby; she practically wriggled her way out of the swaddle blanket the few times I had her in it and will kick off any blanket I put on her, and I even have to distract her while I zip her into her sleeping bag so she at least will stay covered at night.

Our lives have definitely changed and for the better.  We love being parents to our daughter and are still amazed at God's gift to us.  We have truly appreciated our parents making trips over to meet Ellen and spend time with us in our early days of parenthood, as well as, the plethora of cards and gifts we've received from friends and family.  We are truly blessed.

Okay, Ellen didn't enjoy the whole photo shoot, but this is such an adorable face, I just had to share!
